One bag red lentil jambalaya mix
4.5 cups water
2 large carrots, peeled & sliced
3 cups spinach
1 green bell pepper, diced
1 small onion, diced
1 tsp minced garlic
1 Tbsp. olive oil (or canola or vegetable oil)
½ tsp Cajun spice
¼ tsp ground pepper
Tip* : If you do not have fresh carrots, frozen carrots work great too.
