Vegetarian (or Vegan) Red Lentil Jambalaya

Makes 4 servings

What you'll need

Ingredients

One bag red lentil jambalaya mix 

4.5 cups water 

2 large carrots, peeled & sliced 

3 cups spinach 

1 green bell pepper, diced 

1 small onion, diced 

1 tsp minced garlic 

1 Tbsp. olive oil (or canola or vegetable oil) 

½ tsp Cajun spice 

¼ tsp ground pepper

Tip* : If you do not have fresh carrots, frozen carrots work great too. 

Method

  1. In a large pot, warm the olive oil over medium heat. Add the garlic, onions and green pepper and cook until soft and golden brown. 

  2. Add water to the pot and bring water to a boil. 

  3. Pour the bag of red lentil jambalaya mix into the water. Stir  about1 minute, then add the carrots, spinach and spices. Stir, cover and simmer for 20-25 minutes or until all of the water is absorbed. 

  4. Portion into four bowls and serve.
