2.5 cups reduced sodium chicken broth
1/3 cup half and half
1/3 cup cream cheese, 1/3 less fat
2 ¼ cup dried pinto beans
6 oz. chicken breast, raw
1 ½ cups corn, frozen (or canned)
1 red bell pepper, diced
½ small onion, diced
¼ tsp. chili powder
½ tsp cumin, ground
½ tsp ground pepper
Tips:
Chicken can be replaced with canned chicken or removed completely if desired.
Canned beans can easily replace the dried beans and save time as well. Just remember to rinse and drain them with water first.
The cream cheese and half & half can be removed, if desired. An alternative option is to combine 1/2 cup skim milk (or evaporated milk) and 1 tbsp flour (or cornstarch) together and add that in place of the cream cheese and half and half.
When choosing spices, always ensure they are sodium-free.
