Transport yourself to a white sandy beach with this zingy Apple and Mint Iced Tea, topped with fragrant minty ice cubes to keep your iced tea feeling ever-so fancy and ever-so refreshed.

INGREDIENTS

 

2 Lipton Stress Less tea bags

1 cup water

1 pint of freshly-squeezed or store-bought, unsweetened apple juice (100% Juice not from concentrate)

12 mint leaves, plus 2 to garnish

2 unwaxed limes (see chef’s tip)

METHOD 

 

  1. Pick the mint leaves off the stem.
  2. Lay half of the mint leaves on top of each other and roll into a tube. Using sharp scissors cut the rolled-up leaves into ribbons. Repeat with the other half.
  3. Distribute the leaves between 12 compartments of your ice cube tray.
  4. Pour over the apple juice and freeze for 4 hours or overnight.
  5. When ready to serve, brew Lipton Stress Less tea bags for 4-6 minutes in freshly boiled water and allow to cool slightly.
  6. Add six ice cubes to each glass and top with a mint leaf.

 

Chef’s tip: For extra zing, add the zest of 2 unwaxed limes to the mint leaves, their juice to the apple juice.
